Cut: Our Fajita meat is made from our Wagyu Inside Skirt Steak, cut from two muscles below the rib cage, an area called the "Beef Plate".

Flavor / Fat Profile: Inside Skirt Steak is thin with a coarse grain with a high fat content, which melts down to produce a juicy, buttery Umami. This steak is excellent for marinating and grilling.

Preparation: Because the meat is sliced thinly, it cooks quickly. Cook the slices on each side for up to two minutes in a frying pan or skillet over high heat.
